Organoleptic characteristics: The colour is a straw yellow with golden reflections. The aromas range from the delicate aromas of white peach given by Chardonnay, to those of the decided floral and citrus notes of Sauvignon. In the mouth, the entrance is enveloping, the excellent flavour supports the slight sweetness due to the over-ripening of the Sauvignon grapes.
Gastronomic combinations: It is certainly an aperitif wine, excellent with blue cheeses. Guessed with seasoned raw hams, delicate risottos and fish.
Production technique: After the harvest, the two varieties are vinified separately: Chardonnay follows a slow fermentation and at low temperatures to enhance the mineral notes and freshness; the Sauvignon, towards the end of the alcoholic fermentation, undergoes a strong
lowering of the temperature, with the consequent interruption of the fermentation in order to have a slight residual sugar.
Following the ageing on the yeasts for a few months on steel tanks at controlled temperatures and, finally, the two wines are blended, blending with aromatic notes that give flavour and a pleasant softness.
