Vineyard: Mountainous vineyard (800-900m) around Mega Spileo Vineyard.

 

Wine – Making Process: The destemmed grapes stayed in new oak barrels of 400lt for alcoholic fermentation with their skins. One week after the end of the fermentation the wine was removed and the barrels were sealed. The wine returned in the same barrels for 16 months for malolactic fermentation and further maturation. Careful bottling without any addition nor filtration. The wine stayed in the bottle for 24 months in order to develop its character.

 

Features:  Pale yellow brown color. White dried flowers, herbs and spices expressed in a mineral and slightly toasted background. In the mouth, it is fresh and fine with rounded tannins and enough acidity to give structure complexity and potential for further ageing. Refreshing and long aftertaste.

 

Pairings: Big fish, meat with cream or white sauce, aged cheeses.

**Decant carefully before serving, to avoid the sediments.

 

Serving Temperature: 10°C–12°C
