IGP VINO DE LA TIERRA DE CASTILLA
Location: The vineyard is located in the heart of the Castilla la Mancha on the fields of Villarrobledo, at 750 metres high on the Meseta plateau. The strong thermal oscillation allows us to obtain high quality grapes.
Terroir: Shallow soils, sandy texture with 90cm of limestone and sandstone.
Grape Variety: Cabernet Sauvignon.
Vinification: The grapes are harvested and vinified in individual vats. A cold pre-fermentation maceration (10°) is done. The fermentation is made between 25 and 28ºC and a daily manual pumping over is done until the end. Post-fermentation maceration lasts between 15 and 20 days, then the grapes are removed and the wine is transferred into old whiskey barrels for 6 months.
Service temperature: 15-16°C.
Wine aging potential: 3 to 4 years.
