CASAS DEL BOSQUE, GRAN ESTATE SELECTION

Region: Aconcagua / Chile
 

Grape: Pinot Noir, Syrah
 

Taste: Deep violet in colour, on the nose lifted notes of lavender, black currant and cedar combine with just a hint of cinnamon. In the mouth rich notes of rum & raisin, leather and black cherry give way to a touch of bitter chocolate on the finish. Rich, silky tannins combine effortlessly with a fresh acidity and abundant mineral notes leading to an elegant, layered finish.
Viticulture: A blend consisting of 91% Syrah, 9% Pinot noir cropped at an average of 4.0 tons per hectare (1.6 tons per acre). Only our finest grapes from our oldest vines are used to make this limited edition wine of which only 570 cases (or 6,800 bottles) were produced.
Harvest was carried out by hand on March 28th for the Pinot noir and May 17th in the case of the Syrah.

 

Vinification: On arrival at the winery all grapes were first subjected to a whole cluster selection. This was followed by destemming (without crushing) and then an individual berry selection before being gravity fed to small stainless steel tanks. A 6 day cold soak (at 5ºC/41ºF) followed after which time the must was warmed and inoculated with selected yeasts and fermented during 15
days (with temperatures peaking at 28ºC/82ºF). During fermentation the tanks were gently punched-down by hand in order to extract the ideal amount of tannin and colour. Following the completion of fermentation the must was subjected to an additional 12 days of post fermentation maceration (to give a total of 33 days total skin contact). The wine was then pressed off skins and put to 67% new French oak barrels for 24 months during which time it was racked twice: once when it was first sulphured (following the completion of malolactic fermentation) and then once again shortly before bottling. The bottled wine was then carefully matured for three months in our cellar prior to release.
