From the colder locations in the Petaluma Gap for Pinot Noir to the high elevation exposure of Cabernet Sauvignon on Moon Mountain, we’ve followed his spirit of discovery and adventure in bringing together a family of wines that not only pay tribute to our past but celebrate the uniqueness of Napa, Sonoma and Buena Vista.
Winemaking: The Carneros Pinot Noir grapes were handpicked at night and hand-sorted twice before being gently destemmed. Each lot was cold soaked for a minimum of five days to maximize color and flavor extraction. The must was then fermented in small open-top fermenters to broaden the texture and complexity of the wine.
Ageing: After an average of 14 days on the skins, the wine was pressed gently and aged for eight months in 25% new French & Hungarian oak, with the balance in one to two-year-old barrels.
Tasting notes: This Pinot is well-balanced, with layers of strawberry jam highlighted vanilla and spice. A plush and graceful wine, with aromas of strawberries, red raspberries and hints of earth evident in the nose. Because of its complex fruit character and lower tannins, Pinot Noir is one of the most versatile food wines made.
Food parings: Try with fire roasted tomato soup, grilled salmon, quiche Lorraine, pork tenderloin or your favourite vegetarian dishes.
