TASTING
Colour: The colour is garnet-red, very steady, deep and brilliant with purple lights.
Nose: Open, expressive and complex with aromas of very ripe black fruits (elderberry, blackberry), some spicy scents (pepper, Garrigue).
Mouth: Great attack, tight but silky tannins. One notices a dominance of spicy scents, a lot of richness, a good length and a very ethereal final.
Dine Recommendations: Game and truffle, big piece of beef.
Grape variety: Grenache 65%, Syrah 35%.
Soil: Clay and calcareous soil and schists.
Harvest: Grapes are hand-harvested.
Winemaking: The extraction is only performed by punching of the cap during a long maceration which lasts at least 4 weeks.
Maturing: 100% in barrels for 18 months.
Alcohol degree: 15%
