Ageing: Aged in demi-muids on the gross and fine lees for 10 to 11 months.
Tasting notes:
Appearance: Light yellow hue with golden tints.
Nose: A lightly toasted first nose with hints of almond and brown butter then, after the wine has had a chance to breathe, complex aromas of ripe yellow-fleshed fruit and sweet spices emerge.
Palate: Broad on entry to the palate, well-balanced with a lovely downy texture. The structure is dense and saline, the roasted yellow fruit gives way to fine empyreumatic overtones on the finish.
Sommelier’s advice: Recommanded food pairing: Sole Meunière, grenobloise sauce and glazed carrots.
Serving temperature: 12°C to 14°C
Alcohol content: 14,5 %
