Ageing potential: 2-3 years.
Harvest: Grapes are harvested in the morning in order to preserve aromas.
Soil: A subtle soil between clay-limestone and basalt.
Vinification: Vinification is carried out in stainless steel vats. After a light pressing, the wine is cold-settled for around 48 hours. Fermentation started with indigenous yeasts.
Ageing: Ageing is performed in stainless steel vats untill spring and bottling is carried out in “fruit” day in order to preserve all its aromatic potential.
Tasting notes:
Colour: greenish-yellow colour quite deep.
Nose: fine aromas of apricot, pear, marmalade.
Palate: blending of roundness and freshness on the palate, which is a characteristic of Viognier variety on these volcanic soils.
Food pairing: to be served at the beginning of a meal, it will also suit seafood, salmon.
Serving temperature: 12°C
Alcohol content: 13.5%
