M.Chapoutier, Deschants

Colour : Intense garnet red.
Nose : Very floral (violet), developing into liquorice and spices.
Mouth : Supple attack with a dominant of red fruits. The final is long with spices.

Food Pairing: Fish in tapenade sauce, small game, lamb, cooked pork meats. Soft cheeses, goat’s cheese

Grape variety: Syrah.

Soil: The soil is granitic and slightly acidic, on the right bank of the Rhône on the foothills of the Massif Central. We own the parcel of Saint-Joseph, situated between Mauves and Tournon, which has given its name to the appellation.

Harvest: From the veraison, we are regularly checking the maturity evolution. Grapes are hand-harvested to the optimal maturity.

Winemaking: The wine is vinified in open concrete tank with one or two daily pumping over.
Vatting lasts between 3 and 4 weeks.

Maturing: The wine is mainly aged in vats with a part of oak casks from 12 to 18 months.
