BLENDING
Syrah & Grenache
Syrah: grapes grown in hard, stony limestone soils dating back to the Secondary Era lend richness to this wine’s aromas and flavours and finesse to its tannins
Grenache: grapes grown in limestone soil dating back to the Secondary Era lend smoothness and fruity freshness
VINIFICATION
The grapes in each plot are harvested at their peak of ripeness and vinified separately
Syrah: Complete destemming, cold pre fermentation maceration for 48 hours followed by a long vatting time with gentle extractions and warm post fermentation maceration
Grenache: Complete destemming, cold pre fermentation maceration for 48 hours followed by a long vatting time with gentle extractions and warm post fermentation maceration
AGEING
Aged in concrete/stainless steel tanks on fine lees for 6 months to enhance the wine’s structure and bring out all of its fruit and spices
WINEMAKER’S NOTES
This wine features dark red colour and offers an intense, complex nose redolent of blackcurrant, liquorice and peppery cocoa
Rich and intense on the palate, boasting pure, complex flavours of black fruit and fresh spices The finish is long and smooth
